Banana bread with saffron
MOIST BANANA BREAD WITH SAFFRON & VANILLA

INGREDIENTS
- 3 ripe bananas
- 3 eggs
- 200 g Vanilla
- 1 tsp vanilla powder
- 1 tbsp honey or agave syrup
- 2 dl almond flour
- 2 dl oat flakes (ground into flour)
- 2 ml measuring spoon salt
- 0.5 g saffron
- 2 tsp baking powder
- A few chopped walnuts/cashew nuts (optional)
Instructions
Preheat the oven to 175°C. Beat the eggs. Mash 2.5 bananas (save one half to put on top) with the vanilla pudding, almond flour, oats (ground into flour), baking powder, vanilla powder, honey/agave syrup, nuts if desired, saffron and salt. Whisk for a while. Line a bread tin with baking paper and add the batter. Top with sliced banana and a little flake salt. Cook in the lower part of the oven for approx. 45 min.
Perfect with coffee or as a luxury breakfast!
